Daba Style Paneer Chilly Recipe

 


Hello and welcome to my recipe era. And today in the kitchen we will make Chilly Paneer which is made in India. Hey friends, today I am going to show you a very easy daba recipe which is requested by most of you, name of the recipe is Paneer Chilly. We will make it by following few simple steps it turns out really good and tasty the moment you will take a bite it is gonna immediately melt in your mouth. Chilli paneer in a very chat pata style so this is going to be a chatpata chilli paneer. So to make this dish cut paneer into small cubes. We all know, paneer by itself doesn't have much flavor but when you add to different dishes it gives very good flavor and lot of times people have asked me chef why don't you fry the paneer when you use in your dishes. Many years ago there was not so much of a refrigeration what they used to do they used to keep the paneer in water for a day. So this paneer if you leave it out, it will spoil in less than a day so to make sure that they remove of any odd flavor that comes they cut it and fry it but when you make fresh paneer at home or when you have good refrigeration and if your paneer is not mushy or sticky outside, then you don't need to fry. You can add right away but for some dishes like what we're going to make to chilli paneer, I like to fry little bit and add to my chilli paneer because that gives very nice texture to the paneer. So to make this dish first thing is we need to take a cubes of paneer, take little bit of salt you know half a tablespoon of ginger garlic paste one and half tablespoon of cornflour to this you can add water little bit but if you eat eggs you can also add egg to it. If you don't eat eggsx it's okay you don't need to add egg just mix all these mixtures. 

How to make paneer /Cheese cottage at home? 
 Today I will tell you how to make cottage Cheese or paneer at home. You can use this Cottage cheese for making Shahi Paneer, Matar paneer or paneer parantha, Chilly paneer etc. I will share important tips so that paneer is soft and look likes bought from home. lets start with our receipe first of all rinse the pan with water. So that, it is wet and milk when boiled don't stick to it turn on the gas flame and pour the milk into it. Allow it to boil on medium flame. I have used full cream milk as cottage cheese made out of it, will be soft and nice. It will take 7-8 min on medium flame to boil. After first boil stir it properly so that cream in not formed. Now after second boil, turn the gas flame to low, stir it. Add 2 tbsp lemon juice or curd or vinegar and gently stir the milk. After few seconds, you will see the entire milk begins to curdle, switch off the flame as soon as. It curdle so that cottage cheese is soft. Allow it to settle for few seconds and you will see the greenish white water seperates now use a sieve to separate this. you can use any sieve of your choice place a muslin cloth over it. Now pour the mixture over it and stain the excess water. This left over water has many advantages like now make a packet out of it and place heavy utensil over it. You can use any heavy utensil or you can fill water and keep it over it. So the remaining excess water drain out. Allow it rest, after 1 hr cottage cheese is set. Now wash it with clear water so that smell of lemon goes off. You will see that soft , fresh and home made cottage cheese or paneer is ready. Now you can also store this in box filled with water for 2-3 days in a refrigerator.

INGREDIENTS :-
  • Onions - 2 cup finely chopped(500grm)
  • Green Chilli - 4 chopped 
  • Tomato - 1 cup finely chopped(3)
  • Capsicum - 1 cup chopped(2)
  • Mustard oil - 6 tbsp
  • Salt - 1 tbsp/according to taste 
  • Ching's paneer Chilly masala - 1 packet
  • Cloves - 3
  • Bay leaf - 2
  • Cinnamon - 1
  • Badi elaichi - 1(Cardamom) 
  • Choti elaichi - 1
  • Cumin seeds - 1 tbsp
  • Garlic chopped - 12 clove
  • Ginger - 1 tbsp (grated) 
For Marination 
  • Paneer - 200grm
  • Corn flour - 2 tbsp
  • Salt - 1/2 tsp
  • Curd - 3 tbsp
  • Kashmiri red chilli powder - 1 tsp
  • Cumin powder - 1 tsp
Species 
  • Turmeric Powder - 1.5 tsp
  • Coriander Powder - 3 tsp
  • Red Chilli Powder - 1 tsp
  • Kashmiri Red Chilli powder - 2 tsp
  • Cumin powder - 2 tsp
METHOD :-
Marination - 
  • To make Chilly Paneer we cut the Cheese in cubes. 
  • Add Curd, salt, kashmiri red chilli powder, corn flour and Cumin powder. 
  • Mix all well and and keep it mind that paneer don't break. 
  • Leave it for 15 mins and cover it. 
For frying-
  • After 15 mins of Marination, heat oil for frying. 
  • Deep fry the paneer, until it turns golden in colour. 
  • Than drain it out and keep it aside. 
Paneer Chilly - 
  • Heat a kadhai and add 6 tbsp mustard oil. 
  • When oil become hot than add bay leaf, Cloves, cinnamon, Badi elaichi, and Choti elaichi . Give a stir. 
  • Than add cumin seeds, chopped garlic and chopped green chilli. Saute it for 30 seconds.
  • Add chopped onions and saute it, until it becomes translucent and than add grated ginger. 
  • And saute onions for 2 mins more. So it become golden in colour. 
  • Than add all spices mention above in the ingredients.   And give a nice stir,so all masala get mixed well. 
  • Than add half cup water and cook the masala until it releases oil. 
  • When the masala starts releasing oil than add chopped capsicum. Cook it for 2 mins. 
  • Add salt 1 tbsp or according to the taste. Give a stir. 
  • Than add the chopped tomatoes and cook until the tomatoes become softer.  Cook it on high flame. 
  • Meanwhile take a smal bowl or glass and half cup water. Than add full packet of Chings Paneer Chilly masala and mix it properly. So no lumbs should be there. 
  • When the tomatoes are well cooked than add soy sauce and tomato sauce. Give a stir. 
  • Add the chings paneer chilly masala mixture and cook for 3 minutes. So that Masala will be cooked well. 
  • If you masala looks dry than add half cup water and cook for more 1 minutes. 
  • Than add the fried paneer and cook it on medium-low flame for 1 minutes.
  • Than add 1 cup water, give a nice stir and cook for 3 minutes. 
  • If you want more gravy than add more water and Boil it for some times. 
  • Your Daba Style Paneer Chilly is ready to serve.
