Hello, Welcome to Repast Love. Today we are going to prepare Gulab Jamun. It is one of the popular Indian desserts in parties, weddings and festivals. These deep fried soaked sugar syrup balls are delight to relish.
Festivals are incomplete without sweets. But the high adulteration ruins the mood. That is why, I made this Soft and yummy Gulab Jamun.
Lets start. To make gulab jamun, you will need.. 250 grams khoya, or mawa,I have home made mewa, 50 grams paneer, or cottage cheese, 50 grams or 1/2 cup all purpose flour, 300 grams or 2cup sugar for syrup, 1/2 teaspoon cardamom powder. Lets prepare sugar syrup first by adding 1.5 cup or 300 ml water, and 300 gram sugar in a pan. Let it boil.Sim the gas after 5-6 minutes. Put few drops in a bowl to check the thickness. It should be sticky, and should form a string between the fingers. Do not make it too thick, or watery. Add some cardamom powder. It gives fragrance to the recipe. Grate cottage cheese so that it can be easily crush, and press using palm to make it slippery. Add khoya, and press similarly to make it slippery. When they mix properly, add all purpose flour, and press. This step is the most important to make perfect gulab jamuns. If the mixture is not smooth enough, the balls may crack. I have pressed it for 10 minutes, and it has transformed into a dough. We will make a ball, and put it in hot if to check if it cracks or not. If the ball fries fast, it means the oil is too hot. The ball here fried fast, but it did not crack, it means the mixture is perfect.
What if the Gulab Jamun ball cracks?
If the ball cracks, then add more all purpose flour in the mixture. And you can also add ghee. The ball must be smooth from all sides, and has no cracks. If it has cracks that it means you have to add more all purpose flour. Make all the other balls too. The size of the ball will double after frying.
Things Need to know about oil!
The oil should be just enough, so that the balls dip in it. The oil should be hot according to the need to fry these balls. Do not overcrowd. Now the most important tip, Turn the gas to medium after the oil is heated.
What if we fry the balls on high flame?
The balls will be fried from outside, but raw from inside. Keep stirring on medium flame for 10-15 minutes. Do not rush. If their color changes fast, it means the oil is too hot. The gas should be medium to fry them from inside too.
This recipe is seriously easy, and homemade gulab jamuns are better than the market ones. They are healthy and hygenic too, and can be stored for 1 week in refrigerator. They are mouth watering. Aren't they?

Lets start. To make gulab jamun, you will need..
INGREDIENTS :-
- Paneer - 50grm
- Mewa/Khoya - 1 big cup (for home made Mewa -Click here)
- Flour - 1/2 cup
- Sugar - 2 cup
- Water - 1.5 cup
- Lemon juice - 1/2 tbsp
- Cardamom powder - 1/2 tbsp
- Ghee - 2tbsp or needed
- Milk - 5 tbsp
METHOD :-
For Chasni (Sugar Syrup)
- Take a vessel and Add 2 cup Sugar and 1.5 cup water.
- Turn on the flame and keep the flame low
- Keep it stirring till the sugar get dissolve completely.
- Add Cardamom powder and 1/2 tbsp lemon juice .
- And boil it for 1min more if sugar is fully dissolved and if sugar is not dissolved completely than boil it, till sugar get fully dissolved.
- Once, sugar get dissolved, turn off the flame. Don't boil it more.
For Gulab Jamun Balls
- Take a plate.
- Put paneer and Mewa. Mash the paneer or grate it using grater.
- Than mix paneer and Mewa, add 1 tbsp ghee and knead it.
- When both will mixed properly, than add Flour 1/4 cup and 2 tbsp milk.
- Mix all and knead it using your palm.
- When it will become smooth, than add the remaining flour and 2 tbsp milk.
- Make a smooth dough, knead it utill there is no cracks in the dough. (I knead the dough for 10 min).
- Than make small balls, check there should no cracks in the Gulab Jamun balls. Otherwise it will break while frying.
- If there are cracks in the balls, than knead the dough more.
- Now, make the balls , if needed than rub ghee on your hand.
- Heat the oil for frying the gulab jamun. When the oil is medium hot than add the balls.
- Frying it on medium flame. Keep it rotating, so gulab Jamun balls will evenly Cook.
- When it becomes brown in color, take it out of oil.
- And don't keep it on plate, put it directly into the Chasni.
- Leave it in chasni for 2 hours. And after 2 hours enjoy your Gulab Jamun. 😍
