Chessy White sauce Pasta Recipe


  Hey everyone, how is your cooking going on? Today I am thinking to make kids and our favourite white sauce pasta. I am going to share with you all the recipe guys, if you like my recipe, do comment and share with your friends, and  specially with those who have kids. 
Let's begin with the recipe, To prepare Chessy white sauce pasta. Firrst of all we will boil the pasta, i have taken three cup of pasta, here approximately 250gms. My sister's kids call it pipe pasta, this is actually Penne pasta, easily available in the market or you can order it from the link I share below. You can even use any other shapes of pasta. Take four to five cup of water in a vessel to boil pasta, then add a teaspoon of salt and half a teaspoon of oil and mix it. Once water comes to a boil, then add pasta. 
Why should we add salt while boiling the pasta? 
It is very necessary to add salt at this stage because pasta has no taste to it. If you don't add salt at this stage you would miss the chance to give flavour to your pasta. So don't forget to add salt while boiling the pasta. 
Why to take care of the amount of oil use while boiling the pasta? 
It is second important thing, don't put very much oil otherwise your pasta get very oily and it won't be able to coat the sauce properly. 
I got this tip from my mother to, not to add too much of oil while boiling pasta or noodles. Keep stirring, untill it comes to a boil. So these two important tips, I wanted to share with you guys. You have to cook it on a medium high flame. Keep stirring in between so that it doesn't get sticky you have to cook it only 80% i.e 3/4th. let me tell you, by breaking one piece you can see a white ring on the corners, it is breaking easily but it is still undercooked because we are going to cook it with the sauce as well in english it is called Al dente. Once 80% cooked, Transfer cooked pasta to a large colander and drain excess water. 
Why we should wash the pasta with cold water after boiling it? 
To stop it's carryover cooking, we will wash it once with normal or cold water. Carryover cooking means, it retains heat and continues to cook even after being removed from the source of heat.
 Then spread the pasta in a tray or in colander at this stage you can spread some oil
Why to spread oil on pasta after boiling ? 
If you are going to cook pasta after a while, so that it doesn't get stick to each other. 
Some tips for flavour - 
  • Don't use too much onion because we are going to add lots of veggies.
  •  cook onions or vegetables for only 1-2 mins don't make it too dark. 
  • You can adjust the quantities of veggies as you like. 
  • You can even add mushrooms or chicken
  • Don't over cook the veggies let your veggies be little bit crunchy because we have to cook it with sauce too. 
  • All purpose flour needs to be same to prepare white sauce pasta. 
Today I am using little bit of carrot then roughly diced half capsicum and handful of cabbage. Sometimes I use to add corns because I love it. Keep in mind to cook it on low to medium flame. 
Why to take same quantities of butter and flour? 
 Lots of my friends have asked me about the quantity of butter and flour to make white sauce because some people add too much of flour and less of butter so the sauce turns out very thick and raw. To avoid that, keep the ratio same. It will help to make your sauce lump free and cremy. 

How you will come to know at what stage you have to add pasta? 
So for that, one more important tip whenever you dip spoon into the sauce and back of, the spoon coats the sauce completely. It is perfect consistency to add pasta. Follow this thumb rule consistency shouldn't be very thick or very liquid.

What if sauce is very thick? 
If your sauce is very thick, it won't coat pasta properly means your pasta won't be able to cook properly in very thick sauce. That's why sauce should be of perfect consistency to cook pasta. 
What to do if sauce is thick? 
 If you find your sauce thicker, you can add two tablespoon of warm milk or regular milk. And cook it for 2-3 mins, don't over cook it, otherwise it will get all mushy. 

 You can add as much qauntity of cheese as you want beacause sometimes you deserve a treat for yourself whenever i make this pasta, i feel like let me have as much as i want today.

INGREDIENTS :-
  • Pasta - 3 cup
  • Oil - 3 tbsp
  • Garlic - 3 chopped 
  • Onion - 1 chopped 
  • Bell pepper /capsicum - 1 chopped
  • Carrot - 1 chopped 
  • Cabbage - 1 cup Chopped 
  • Salt as per taste 
  • Butter - 5 tbsp
  • All Purpose Flour - 4 tbsp
  • Milk - 1.5 cup
  • Cheese - 2 cubes/1 cup grated
  • Cumin Powder - 1 tsp
  • Black pepper powder - 1/2 tsp
  • Red chilli Powder /flakes - 1/2 tsp
  • Pasta masala - 1/2 tsp

I had used these ingredients, you can buy this for same taste. 


METHOD :-
  • Boil 5 cup water and add 1 tsp salt and 2 tsp oil. When it is boiled than add pasta. Boil pasta for 10 min and seive it. 
  • Spread cold water on pasta and lillte oil. Keep it aside. 
  • Heat a pan and add 3 tbsp oil, when oil become hot, than add chopped garlic and saute it for 30 seconds.
  • Than add:chopped onions, capsicum, carrot and cabbage. 
  • Cook it for 2 min than add salt as per required and cook for 2 min more. Than turn off the flame. 
  • Now heat a wok/pan and add 5 tbsp butter, let it melt completely. 
  • Than add all purpose flour and Whisk it, so no limbs should form.
  • Than add 1.5 cup milk and mix it. It will become like a smooth batter. 
  • Now, add 2 whole cubes of chesse and whisk it until it melt completely. 
  • Now, add salt, Cumin powder, red chilli powder and black pepper powder. Mix all and cook for 30 sec. 
  • Now, add boiled pasta and cook for 3 min. Keep it stirring. 
  • Turn off the flame and serve white sauce chessy pasta..
