We will make Milk Powder Malpua. Plain Malpuas are made from wheat flour. And Mawa Malpuas are made from mawa mixed in refined flour and are very delicious. Today we will prepare Mawa Malpua with milk powder mixed in refined flour. These Malpuas are as delicious as the mawa malpuas. This is a classic dessert Indian version of pancake topped with flavored sugar syrup. This is a mouth watering dessert made for festive occasions
Wishing you all a very Advance Happy Navratri!! As festival season are comingsoon and we all remain busy in all those household chores and we've to fast too. So you need to have food which keep you energetic during these fasting days. So today I'll be sharing 9 Vrat special recipes which keep you energetic and healthy in these fast days. So lets get started.
LAUKI KHEER RECIPE:-
- For that, boil milk in a pan.
- After milk get boiled, add grated gourd and mix it well.
- Add condensed milk to add more taste in it and add sugar as per taste
- Continuous stirring, cook it until it reduce to half and it takes around 15 minutes.
- Than add cardamom and mix it well
- And here Vrat Special Lauki is ready to taste.
SABOODANA ALOO TIKKI:-
- For this take two boiled potato, soaked Sab udana, salt as per taste, green chilli, coarsely grounded nuts mix all these ingredients using a spoon and this tikki mixture is ready.
- Apply some oil in your palms so that it doesn't get stick to your hand and now prepare the tikki with this mixture.
- Likewise prepare all the tikki.
- Now heat clarified butter(ghee) in a pan now place all the tikki on this pan and cook it till it turn to golden brown.
- Add a bit ghee over the tikki and these take around 3 to 4 min to get completely cooked from one side.
- Then flip this, you can deep fry them if you want.
- Now these sabudana tikki are ready to eat, you can serve it with green chutney or curd.
ALOO LOLLIPOP:-
- For this take small sized potatoes and boil them, peel them after cooling.
- Heat the oil in a pan, add cumin seed and black pepper and slightly fry them.
- Now add green chilly to add taste.
- Now press boiled potatoes with a roller,
- And than place all these one by one in the pan and allow them to roast till they turn golden brown.
- And they take around 3 mins on medium flame and then flip them.
- After getting completely cooked add salt as per taste and black pepper to make it little spicy.
- Our Aloo Lollipops are ready to eat serve them with green chutney.
KUTTU ATTA CHEELA:-
- We will add 1 cup kuttu's atta, grated cucumber to add more taste, grated carrot, chopped green chilly, salt as per taste and a pinch black pepper, first mix them dry.
- Than add water to make batter need to make the bater of flowing consistency.
- Now spread clarified butter( ghee) on a pan and heat it once ghee gets heated spread the bater and allow it to Cook.
- It takes around two minute to cook on a medium low flame.
- When it leave the edges than flip it.
- Now cook it on other side as well.
- Than sprinkle paneer over it and serve it hot.
MATGE KI ARBI:-
- Boil arbi in a pressure cooker for 1 whistle than peel it and cut it into small pieces.
- Now heat ghee in a pan once oil gets heated then add green Chilly and saute for 30 sec.
- Then add boiled Arbi and fry for 1 minute.
- Than add 1 cup water and add curd after water gets boiled.
- Continuously keep stirring it after adding curd, so as to avoid lumps.
- Now add salt and black pepper as per taste.
- Allow it to cook for 2 minutes and here Mathe ki Arbi ready to serve.
SHAKARKANDI CHAAT:-
- For that boil the sweet potato in a pressure cooker or you can microwave it.
- After making small cuts in it peel it and cut it.
- To make it spicy, add lemon juice, rock salt, black pepper in it or garnish it with the fruit which you like.
- And serve it.
MANGO SMOOTHIE:-
- For that, take sliced mango, curd, sugar and dry fruits.
- Now put all these ingredients in a blender jar, blend it.
- And our Mango Smoothie is ready this mango smoothie will keep us energetic during fast.
SABOODANA KHICHDI:-
- For this, soak Sabudana for about 3 to 4 hours.
- Heat ghee in a pan, fry ground nuts in it. After getting fried take them out in a plate.
- Likewise fry potatoes after 3 to 4 minutes, take out them in a tissue paper.
- Now add 2 tbsp ghee in this pan once ghee gets heated, then add cumin seeds and saute it for 30 se2.
- After that add soaked Sabudana and allow it to cook for about 2 minutes.
- Then add chopped tomato and green chilli.
- Than add rock salt as per taste and add black pepper as per taste covet it.
- Give a stir and allow it to cook for 3 to 4 minutes.
- After getting cooked add that fried potatoes and ground nuts to it. Cook for more 1 min.
- Your Sabudana Khichdi is ready.
KUTTU ATTA PURI:-
- Take 2 cup kuttu's atta (flour) and rock salt as per taste and mix them.
- Now add 2 boiled mashed potatoes.
- Now knead it to make a stiff dough with the help of boiled potatoes.
- Don't use water to knead it and try to keep the dough soft.
- Now make small balls of it and keep this ball in the middle of a polythene and spread it (roll it) using a roller.
- Heat some oil for frying this puri.
- Fry all puri and you can serve these puri with aloo sabzi or even with Matha Arbi.
Some tips:-
Salt = Rock salt(sindha namak)
Kuttu's Atta = Buckwheat Flour
Sabudana = Sago
Arbi = Taro
Shakarkandi = Sweet Potatoes
INGREDIENTS :-
- All Purpose Flour - 1 cup
- Milk Powder - 1 cup
- Milk - 1 cup
- Sugar - 1 cup
- Water - 1 cup
- Cardamom powder - 1/8 tsp
METHOD :-
- Take a mixing bowl and put a seive over it.
- Now we will add our All Purpose Flour and Milk Powder.
- And seive them. After that, we will take 1 cup Milk.
- And add it to the flour, slowly - slowly in small quantity and keep it mixing. So to prevent lumbs formation.
- Mix 1 cup milk with the flour and milk powder without lumbs formation.
- We need flowing batter. If your batter requires more milk than you can add.
- Now cover it and leave it for 15 to 20 minutes.
- Meanwhile we will make our sugar syrup.
- Take 1 cup sugar and water, add it to a vessel.
- Boil it on low flame, till the sugar get completely dissolved.
- Once the sugar get dissolved, add Cardamom powder and boil for more 30 seconds.
- Than check that is the syrup is sticky or not. As we need little sticky syrup.
- Than turn off the flame.
- Now take the batter and mix it once.
- Now we will heat refined oil or ghee in a kadhai for frying our malpuas.
- Take one scoop of batter and put it into oil.
- When the malpua is fried from the below, flip it.
- Fry it until the colour become golden brown from both sides.
- When it become golden brown in colour than take it out from ghee/oil.
- Use two spatula to squeeze out the extra Ghee from the malpuas.
- Than keep them into the sugar syrup for 2-3 minutes.
- Likewise make all mal puas.
- After 2-3 min take out the malpuas from the sugar syrup. And drain out the extra sugar syrup from malpuas.
- Garnish it with Cashew and Pishta..it is ready to serve.
- Your delicious rajasthani Malpuas are ready.
