Khandvi
Today, I am here with a Gujarati dish well known as Khandvi.. This is very good and delicious as well as healthy food that you can make for your kids.You can also use this Healthy Food in your diet.
Khandvi is made from the mixture of gram flour and buttermilk. You must be thinking - "what is buttermilk?". Buttermilk is a mixture of Curd and water. This is a recipe that you can make very quickly and easily, all the ingredients use in it are easily available in your home.
One thing must be kept in mind that when you are spreading Khandvi on a plate, please do it quickly or else it will form lumbs and it won't spread well.
About 1 year ago, I ate Khandvi for the first time at my friend's house. She is a Gujarati. I learned about the recipe of making Khandvi from her mother, then I came home and made it just by remembering those things. When I made it for the first time, it was not so good but when I made it this time, it was very tasty.You probably do not believe that how easy it can be, once you watch my video which I have put, then you will also speak "Oh wow! it's so easy". My effort has been that by sharing this recipe I can make it easier for you guys. The proportions of this recipe yields 25 to 30 khandvi rolls which also depends on how thinly or thickly you spread the batter.
I forgot to tell you one thing, whenever you use gram flour to make khandvi, that gram flour should not be too old,use fresh gram flour. Because if you use the old gram flour, the khandvi will break while rolling.
Now you may be wondering how we will know whether our gram flour is old or new. Right?. It's so simple guys. Take 1tbsp gram flour and 1tbsp water, mix it. If it is very sticky then your gram flour is new and if it is less sticky then your gram flour is old.
According to me, I have tried very well on my behalf to tell you about making khandvi and to make everything easy for you people. Now, it's your responsibility also to tell me how much you like it.
INGREDIENTS :-
- Garam flour - 1 cup
- Curd - 1cup
- Green chilli paste - 1 tsp
- Ginger paste - 1 tbsp
- Salt as per taste
- Mustard seeds - 1tsp
- Curry leaves - 5/8
- Green chilli - 2 chopped
- Oil - 2 tbsp
- Water - 2 cup
- Take a bowl and add Gram flour, cued, water, salt, ginger paste and green chilli paste.
- With a wired whisk, keep on stirring and mixing till all the lumps are dissolved and you get a smooth batter.
- Heat a pan and Place a sieve on it.
- Now pour the batter and while pouring strain it. So that all lumbs get removed.
- We have to Cook it on low flame.
- Cook this till it gets nicely thick.
- Now take a good quantity of thick batter over the top of a plate or you can use any thing flat.
- Using the backside of knife spread it evenly.
- And let it dry. This will take 10 min.
- Now we have to prepare for tempering.
- Heat a pan and add oil to it.
- Add mustard sedds, curry leaves and green chilli chopped
- Saute it for 30 sec and then add coconut (grated).
- Saute it for more 30sec. Turn off the flame.
- Now sprinkle the tempering on top of the khandvi and some fresh Coriander leaves chopped.
- Using a knife, at an appointment distance of 1 - 1.5 inch, we will just cut the khandvi.
- Now roll them using both hands..

- Your khandvi is ready, garnish it with coconut and serve it.
