Lemon Rice..


You will all fall in love with the type of recipe I brought today. Lemon rice is the most easy and popular South Indian recipe.

As I have told you earlier, I stayed in PG at Jamshedpur. There, I had a friend who was a South Indian, she brought Lemon Rice. And that day I tried it, I found it very tasty..
This dish is tangy, crunchy and so flavorful. Pair with pickle or papadum for a delicious meal. It is also known as Chitranna. Many people pack it for road or train journey as this is  good for long hours due to addition of turmeric.
Making lemon rice is one of the simplest recipe. The entire dish is done under 20 minutes and if you have precooked rice then it take only 10 minutes. You can take it with yogurt, pickles, salad, raita or chutney.

INGREDIENTS :-
  • Rice - 1 cup, 200 grams, (basmati rice) 
  • Water - 1.5 cup 
  • Salt 
  • Lemon juice - 2 tbsp
  • urad dal - 2 tbsp soaked for 10 minutes
  • Chana dal - 1/2 tbsp soaked for 10 minutes
  • Oil - 2tbsp
  • Peanuts - 2 tbsp
  • Mustard seeds - 1/2 tbsp
  • Curry leaves - 12-14
  • Green chili - 1 sliced, or to taste
  • Turmeric powder - 1/4 tbsp
  • Hing - 1 pinch
METHOD:-
  • Rinse rice until water turns clear. Then transfer to a pressure cooker with 1.5 cups water. Cook on high flame for 3 whistles. 
  • Meanwhile soak urad dal and chana dal in water for 10 to 15 minutes as the rice cooks. Then drain the water from the dals and set aside.
  • Once the rice is cooked,  transfer to a large bowl and let it cool down. Then add the salt and the lemon juice and mix well until combined and set it aside.
  • Heat 1 tablespoon oil in a small pan on medium heat. Once the oil is hot, add the peanuts to the pan. Cook the peanuts until turn light golden brown. Remove peanuts on a plate lined with paper towel.
  • To the same pan, now add mustard seeds and let them pop.
  • Add the soaked & drained dal to the pan. Saute until they turn light golden brown on low flame.
  • Add the curry leaves and chili. Saute for few seconds. Then add the turmeric, hing and mix. Remove pan from heat.
  • Transfer tempering to rice along with the roasted peanuts. Mix all the seasoning well with the rice. Adjust salt and lemon juice to taste at this point.
  • You can also add cashews to this lemon rice for that extra crunch and taste.
  • Serve lemon rice with a side of pickl

Easy and yummy Fruit Custard Recipe
